Oasis of Tunisia:

In the oases of Tunisia, one finds the palm trees date palm. The date palm, called “tree of life” by Chaldéens, can reach some 30 meters heights; it is a plant which needs much sun and moisture.

A tree gives on average 100 kg of dates per annum during only harvest carried out. These dates are grouped in several bunches or modes which can weigh between 10 and 15 kg.

The date, of oblong form, have colours going from the yellow to the red; when it becomes ripe, it is generally of reddish brown color.
It is a fleshy fruit variable length, on average of approximately 4 cm.

The dates are sold in bulk or with the weight on the stems of the mode, or out of boxes in the form of dry dates, partially dehydrated, sometimes coated of a syrup to preserve their moisture (to prefer those not coated!).

The most known variety: the date nutmeg. The best variety: the deglet-nour (“fingers of light”),
